I’ve been hearing from a lot of you that fresh recipes are a huge help. We all get stuck in a rut sometimes and nothing motivates me to eat healthy quite like a fresh recipe.
This one is a delicious shrimp cobb salad. With the weather warming up, salad season is back! The lemon in this dressing recipe is especially delicious too.
Shrimp Cobb Salad Recipe
Dressing Ingredients:
1/2 cup extra virgin olive oil
1/4 cup lemon juice
1 tsp. minced garlic
1 tsp. spicy brown mustard
1 tsp. sea salt
1/2 tsp. black pepper
Directions:
Mix all ingredients in a small mason jar. Shake vigorously and store in the fridge until ready to serve.
Salad Ingredients:
1 lb. shrimp, peeled & deveined (thawed if frozen)
6-8 slices nitrate free bacon, cooked and crumbled
3 hardboiled eggs
1 cucumber, chopped
1 cup cherry tomatoes, halved
1 ripe avocado, chopped
¼ red onion, chopped
5 oz container of your favorite salad greens
1 tbsp. olive oil
Sea salt and black pepper
Directions:
Have all ingredients ready to go, including cooked and crumbled bacon and hardboiled eggs.
Heat your grill or grill pan to high heat and brush with olive oil. Sprinkle shrimp all over with salt and pepper.
Cook first side 2 minutes flip and continue to cook another 2-3 minutes or until pink and opaque with golden brown.
Place greens on the bottom of your salad bowls, then arrange the cucumbers, tomatoes, bacon, avocado, and red onion over the top. Carefully slice each egg and arrange around salad.
When ready to serve, top with the shrimp and Lemon Garlic Vinaigrette.
