Delicious New Recipe for YOU- Avocado Tuna Salad

Embarrassing kitchen stories! We all have them. Most people who know me as a nutrition coach, healthy food lover, and kitchen connoisseur don't know that my culinary skills are recently acquired and I still make a LOT of rookie mistakes! 

I'm a self-taught chef who has learned through trial, error, and YouTube. I've had my fair share of dinner flops and meals that my husband has politely stated, "I wouldn't be upset if you never made this again." 

I try to embrace the kitchen like every area of my life, if you're not failing, you're not growing. If you get over your fear of failing and cooking something that turns out inedible, you open yourself up to the possibility of learning to make new dishes that you might really love! 

I remember a few years ago when I had my first go at cooking a tri-tip in the oven. I didn't have a lot of experience cooking large cuts of meat in the oven as I usually leave that to my barbecuing husband. He was out at a late soccer game so I was handling a hectic Sunday dinner and evening routine alone with our three kids. 

I pulled the meat out to check the temperature and it wasn't anywhere close to being done - the WORST when you have hungry kids! I put it back in for 10 minutes... still not done... back in for 10 minutes... WHOOPS! I pulled the meat out and realized that I had put it back in the oven WITH THE MEAT THERMOMETER STILL IN! And this was not one of those oven-proof thermometers. (Face palm!) 

FAIL! Fortunately the glass just melted, it didn't explode and send shards of glass into our dinner. Not a huge deal, but I felt a bit foolish. And Jason had an easy idea for my next Mother’s Day gift, ha! 

I share this with you so you know that health coaches fail in the kitchen too. I'm always learning!

Avocado Tuna Salad 

 Ingredients: 

  • 1 can Tuna (drained 

  • 1  Avocado (medium) 

  • 1 stalk Celery (chopped) 

  • 1 Apple (small, chopped) 

  • ½ tsp Sea Salt 

  • 1 tbsp Lemon Juice  

Directions: 

  1. In a medium-sized bowl, add the tuna. Add the avocado and mash well with a fork to combine. 

  1. Add the celery and apple to the tuna and season with salt. Add the lemon juice and stir to combine. Serve and enjoy!
