It’s back to school week in our house so I’m keeping our meals super simple. Simple and healthy doesn’t have to mean boring and tasteless, I still want our food to be delicious!
A tip for you from a mom of 14+ years, kids LOVE eating food off of sticks. There’s just something festive about skewers, even if what’s on them isn’t any different than a regular dinner you’d cook in the oven. Whenever I put food on skewers my kiddos are so enthusiastic about dinner, even the veggies!

Honey Garlic Chicken Skewers
Ingredients:
1 lb Chicken Thighs (boneless, skinless, cut into 1-inch cubes)
3 tbsp Honey
2 tbsp Sesame Oil
4 Garlic (clove, minced)
Sea Salt & Black Pepper (to taste)
1 Red Bell Pepper (medium, chopped)
1/2 Red Onion (cut into chunks)
12 Barbecue Skewers
2 tbsp Sesame Seeds
Directions:
Preheat the oven to 425 F and line a baking sheet with aluminum foil.
In a shallow bowl, toss together the chicken cubes, honey, sesame oil, garlic, salt, and black pepper.
Thread the chicken, bell peppers, and onions onto the barbecue skewers. Place the skewers on the baking sheet. Bake for 18 to 20 minutes or until the chicken is cooked through.
Sprinkle the sesame seeds on top. Enjoy!
