Last week we talked about using the slow cooker or Instant Pot to cook a large batch of shredded chicken (easiest recipe EVER with only two ingredients). Today I'm going to give you three recipes to use with ground meat.
My favorite kind of ground meat is actually bison! I love bison because it's always grass-fed and contains a high amount of omega-3 fatty acids. It's rich in iron for cell development and vitamin E to keep your skin glowing. It's also jam packed with protein!
Other ground meats I like include grass-fed beef and organic turkey. You can use whatever kind of ground meat you like but I highly recommend bison!
PREPPED PROTEIN: GROUND MEAT
There isn't so much as a recipe for the protein cook-up as just a method. I take 2-3 pounds of ground meat (or however much you need for your family), granulated garlic powder, salt and pepper. I generally season 1 pound of ground meat with 1/2 tsp garlic, 1/4 tsp sea salt and 1/4 tsp black pepper.
Brown the meat in a large pan over medium-high heat, season, and break up with a wooden spoon as the meat cooks. Keep cooking until all the pink is gone and the meat is cooked. You can taste and season more if you'd like.
Now you have a big batch of ground meat to use with three different meals!
Meal #1: Serve ground meat in lettuce wrapped tacos.
I love using butter-lettuce leaves or savoy cabbage as a substitute for tortillas or taco shells.
Top with your favorite healthy taco fixings: avocado, organic cheese, salsa, black beans, sliced radishes, tomatoes, cilantro, or whatever you like! Add more spices to the ground meat to give it a little flair. I like cumin and chili powder.
Meal #2: Go to your freezer stash for frozen peppers and onions to make a quick stir-fry.
I always keep frozen peppers and onions in the freezer for a quick meal. Add some coconut oil to a pan, heat on medium-high for 2 minutes, and add the peppers and onions. Cook the peppers until they are thawed and then add the pre-cooked meat to the same pan.
Add coconut aminos, sliced water chestnuts, chopped cashews and green onions for extra flavor.
Meal #3: Meat sauce and spaghetti squash.
This is one of our go-to easy meals! Spaghetti squash can even be cooked few days in advance so all you need to do is assemble and warm before eating.
Season your cooked spaghetti squash with a little salt and pepper. Warm the ground beef with marinara sauce and then serve on top of the spaghetti squash "noodles". Add some chopped spinach to the meat and sauce mixture as its warming up for a bonus nutrient punch!
